Ingredients:
- Lentils
- Onion, diced
- Carrots, diced
- Celery, diced
- Garlic, minced
- Vegetable broth
- Tomato paste
- Worcestershire sauce
- Mashed potatoes
- Butter
- Milk
- Salt and pepper to taste
Instructions:
- Cook lentils according to package instructions, then set aside.
- In a skillet, sauté diced onion, carrots, celery, and minced garlic until softened.
- Stir in cooked lentils, vegetable broth, tomato paste, and Worcestershire sauce. Simmer until the mixture thickens.
- Meanwhile, prepare mashed potatoes by boiling potatoes until tender, then mashing them with butter, milk, salt, and pepper.
- Transfer the lentil filling to a baking dish and spread mashed potatoes over the top.
- Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the mashed potatoes are golden brown.
- Serve hot, garnished with fresh herbs if desired.
