Ingredients:

  • Lentils
  • Onion, diced
  • Carrots, diced
  • Celery, diced
  • Garlic, minced
  • Vegetable broth
  • Tomato paste
  • Worcestershire sauce
  • Mashed potatoes
  • Butter
  • Milk
  • Salt and pepper to taste

Instructions:

  • Cook lentils according to package instructions, then set aside.
  • In a skillet, sauté diced onion, carrots, celery, and minced garlic until softened.
  • Stir in cooked lentils, vegetable broth, tomato paste, and Worcestershire sauce. Simmer until the mixture thickens.
  • Meanwhile, prepare mashed potatoes by boiling potatoes until tender, then mashing them with butter, milk, salt, and pepper.
  • Transfer the lentil filling to a baking dish and spread mashed potatoes over the top.
  • Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the mashed potatoes are golden brown.
