Lemon Garlic Chicken with Roasted Vegetables recipe
A quick and flavorful weeknight meal with juicy chicken, roasted vegetables, and a simple lemon garlic sauce.

Ingredients:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium zucchini, sliced
- 1/2 cup chicken broth
- 2 tablespoons lemon juice
- 1 tablespoon chopped fresh parsley (optional)
Instructions:
- Preheat oven to 400°F (200°C).
- In a bowl, toss chicken with olive oil, oregano, garlic powder, salt, and pepper.
- Arrange chicken in a single layer on a baking sheet.
- Scatter bell peppers and zucchini around the chicken.
- Roast for 20 minutes, or until chicken is cooked through and vegetables are tender.
- In a small bowl, whisk together chicken broth and lemon juice.
- Pour the sauce over the chicken and vegetables, and return to the oven for 5 minutes.
- Garnish with fresh parsley (optional) and serve immediately.
