Ingredients:

  1. 4 boneless, skinless chicken breasts
  2. 1 tablespoon olive oil
  3. 1 teaspoon dried oregano
  4. 1/2 teaspoon garlic powder
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon black pepper
  7. 1 red bell pepper, sliced
  8. 1 yellow bell pepper, sliced
  9. 1 medium zucchini, sliced
  10. 1/2 cup chicken broth
  11. 2 tablespoons lemon juice
  12. 1 tablespoon chopped fresh parsley (optional)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss chicken with olive oil, oregano, garlic powder, salt, and pepper.
  3. Arrange chicken in a single layer on a baking sheet.
  4. Scatter bell peppers and zucchini around the chicken.
  5. Roast for 20 minutes, or until chicken is cooked through and vegetables are tender.
  6. In a small bowl, whisk together chicken broth and lemon juice.
