Ingredients:
- 500g (1 lb) chicken, cut into pieces
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 2 tablespoons red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon black pepper powder
- 1 tablespoon lemon juice
- Salt to taste
- 2 tablespoons rice flour
- 2 tablespoons gram flour (besan)
- 2 sprigs curry leaves
- 2 green chilies, slit
- Oil for frying
- Lemon wedges and onion rings for garnish
Instructions:
- Marinate the Chicken:
- In a large bowl, combine the ginger-garlic paste, turmeric powder, red chili powder, coriander powder, garam masala, black pepper powder, lemon juice, and salt.
- Add the chicken pieces to the bowl and mix well, ensuring the chicken is thoroughly coated with the marinade. Let it marinate for at least 1 hour, or preferably overnight in the refrigerator.
- Prepare for Frying:
- Before frying, add the rice flour and gram flour to the marinated chicken. Mix well to coat the chicken pieces evenly.
- Heat the Oil:
- Heat oil in a deep frying pan over medium heat. Ensure the oil is hot enough for frying by dropping a small piece of batter into the oil; it should sizzle and rise to the surface.
- Fry the Chicken:
- Carefully add the marinated chicken pieces to the hot oil, a few at a time, without overcrowding the pan. Fry until the chicken is golden brown and crispy, about 8-10 minutes.
- Remove the fried chicken pieces and drain on paper towels to remove excess oil.
- Add Curry Leaves and Green Chilies:
- In the same oil, add the curry leaves and slit green chilies. Fry for a few seconds until they are crispy and aromatic.
- Remove and drain on paper towels.
- Serve:
- Arrange the fried chicken on a serving platter. Garnish with the fried curry leaves and green chilies.
- Serve hot with lemon wedges and onion rings on the side.
Cooking time: 20-25 minutes (excluding marination time)
Tips:
- For extra crispiness, you can double-fry the chicken by frying it once until half-cooked, then frying again until fully cooked and crispy.
- Adjust the amount of red chili powder and black pepper to suit your spice preference.
- Serve with coconut chutney or mint yogurt dip for added flavor.
