Kerala Chicken Fry Recipe

Ingredients:

  • 500g (1 lb) chicken, cut into pieces
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 2 tablespoons red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon black pepper powder
  • 1 tablespoon lemon juice
  • Salt to taste
  • 2 tablespoons rice flour
  • 2 tablespoons gram flour (besan)
  • 2 sprigs curry leaves
  • 2 green chilies, slit
  • Oil for frying
  • Lemon wedges and onion rings for garnish

Instructions:

  1. Marinate the Chicken:
    • In a large bowl, combine the ginger-garlic paste, turmeric powder, red chili powder, coriander powder, garam masala, black pepper powder, lemon juice, and salt.
    • Add the chicken pieces to the bowl and mix well, ensuring the chicken is thoroughly coated with the marinade. Let it marinate for at least 1 hour, or preferably overnight in the refrigerator.
  2. Prepare for Frying:
    • Before frying, add the rice flour and gram flour to the marinated chicken. Mix well to coat the chicken pieces evenly.
  3. Heat the Oil:
    • Heat oil in a deep frying pan over medium heat. Ensure the oil is hot enough for frying by dropping a small piece of batter into the oil; it should sizzle and rise to the surface.
  4. Fry the Chicken:
    • Carefully add the marinated chicken pieces to the hot oil, a few at a time, without overcrowding the pan. Fry until the chicken is golden brown and crispy, about 8-10 minutes.
    • Remove the fried chicken pieces and drain on paper towels to remove excess oil.
  5. Add Curry Leaves and Green Chilies:
    • In the same oil, add the curry leaves and slit green chilies. Fry for a few seconds until they are crispy and aromatic.
    • Remove and drain on paper towels.
  6. Serve:
    • Arrange the fried chicken on a serving platter. Garnish with the fried curry leaves and green chilies.
    • Serve hot with lemon wedges and onion rings on the side.
