  • 1 bell pepper, diced (any color)
  • 1 jalapeno pepper, seeded and diced (optional, for extra flame)
  • 1 lb bone less, skin less chicken breasts, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed

  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Sour cream (optional, for serving)
  • Shredded cheddar cheese (optional, for serving)
  • Tortilla chips (optional, for serving)

Instructions:

  1. Heat the olive oil in a large pot over medium flame. Add diced onion, minced garlic, diced bell pepper, and diced jalapeño pepper (if using). Sauté for 5-6 minutes, or until vegetables are softened.
  2. Add diced chicken breasts to the pot and cook until browned on all sides, about 5 minutes.
  3. Stir in drained and rinsed black beans, kidney beans, diced tomatoes, frozen corn kernels, chicken broth, chili powder, ground cumin, smoked paprika, salt, and pepper.

  7. Serve hot with optional toppings such as sour cream, shredded cheddar cheese, and tortilla chips on the side.
