Instructions:
1. In a large bowl, combine the diced or shredded cooked chicken breast with mayonnaise, Dijon mustard, and lemon juice. Mix well to coat your chicken equally.
2. Add finely chopped red onion, diced red bell pepper, diced cucumber, and chopped fresh parsley to the bowl with the chicken mixture.
3. Season the chicken salad with salt and pepper to taste. Mix until all ingredients are well mixed.
4. Cover the bowl with plastic wrap and refrigerate for at least 25 to 30 minutes to allow the flavors to meld.
5. Once chilled, give the chicken salad a final stir and taste for seasoning, adjusting if necessary.
