Ingredients:
- Salmon fillets
- Quinoa
- Brussels sprouts, halved
- Olive oil

- Garlic powder

Instructions:
- Preheat oven to 400°F (200°C).
- Season salmon fillets with olive oil, lemon juice, garlic powder, salt, and pepper. Place them on a baking sheet lined with parchment paper.
- In a separate bowl, toss halved Brussels sprouts with olive oil, salt, and pepper. Spread them out on another baking sheet.
- Roast both the salmon and Brussels sprouts in the preheated oven for 15-20 minutes, or until the salmon is cooked through and the Brussels sprouts are crispy.
- Meanwhile, cook quinoa according to package instructions.
- Serve baked salmon over cooked quinoa with roasted Brussels sprouts on the side.
- Garnish with fresh herbs or lemon wedges, if desired.
