Ingredients:
- 2 large purple sweet potatoes, peeled and cubed
- 2 tablespoons unsalted butter
- 1/4 cup milk (or dairy-free alternative)

Instructions:
- Place the cubed purple sweet potatoes in a large pot and cover with water. Bring to a boil over medium-high heat.
- Reduce the heat to medium-low and simmer for about 15-20 minutes, or until the potatoes are fork-tender.
- Drain the potatoes and return them to the pot.
- Add the butter and milk to the pot with the potatoes.
