Baked Salmon with Quinoa and Roasted Brussels Sprouts Recipe

Ingredients:

  1. Salmon fillets
  2. Quinoa
  3. Brussels sprouts, halved
  4. Olive oil
  5. Lemon juice
  6. Garlic powder
  7. Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Season salmon fillets with olive oil, lemon juice, garlic powder, salt, and pepper. Place them on a baking sheet lined with parchment paper.
  3. In a separate bowl, toss halved Brussels sprouts with olive oil, salt, and pepper. Spread them out on another baking sheet.
  4. Roast both the salmon and Brussels sprouts in the preheated oven for 15-20 minutes, or until the salmon is cooked through and the Brussels sprouts are crispy.
  5. Meanwhile, cook quinoa according to package instructions.
  6. Serve baked salmon over cooked quinoa with roasted Brussels sprouts on the side.
  7. Garnish with fresh herbs or lemon wedges, if desired.
